Shawn Traversy

Executive Chef & General Manager

Shawn started out as an apprentice chef at the Chateau Laurier. While working there he studied at Algonquin College. After four years with CP Hotels, Shawn became eligible to write his inter provincial exam, and earned a red seal certification (90% or better) Shawn accepted a position as Executive Chef at the Irish Hills Golf & Country Club, a semi private club specializing in weddings, tournaments, business meetings, and offering a la carte dining in the members lounge.

After four seasons with Irish Hills, Shawn moved to Pietro’s Banquet Hall, a 1200 seat banquet hall specializing in traditional Italian weddings, & fresh Italian fare. An opportunity to work for Ramada Hotels arose and Shawn accepted the position of Sous Chef, working with Executive Chef Daniel Wright. Daniel’s style and philosophy were a strong influence.

Shawn moved to the Canadian Golf & Country Club, a 27-hole golf facility specializing in shotgun tournaments, weddings and gourmet banqueting. He assumed the role of Food & Beverage Manager and Executive Chef, overseeing and executing numerous premium events.

A position with Compass Food Group as Executive Catering Chef at the Alcatel campus on March Road followed, where Shawn catered to dignitaries from around the world for three years. He continued to operate Chef Express on a part-time basis, enjoying his work on many community events, weddings, and dinner auctions.

At Lone Star Texas Grill, Shawn was named General Manager for the Ranch, Bradley Lodge, & off-site catering. He headed up a city wide delivery service as well as off-site catering, including Grey Cup festivities, corporate parties, picnics & BBQ's, team building days, and weddings.

With Chef-Express, the goal has always been to operate on a full time basis and having built relationships with a number of different organizations, allows Shawn to offer several venues for fine catering (200 seats) as well as a base for off-site catering & deliveries, located in all areas of the city.
